Keeping you warm

The dog days of summer are on the way out with Fall just around the corner.

Although my house is home to a few voracious vegetarians, we still like to keep our merry meat-eaters happy too.

So here’s one of my easy and tasty dishes that will help keep you and your loved ones warm this Fall—feel free to add your own favorite ingredients!

Beef, tomato and chickpea stew

Serves 2

Ingredients:

1 can chickpeas; rinsed and drained
1 can tomato and sweet onions
1 package of cubed beef
2 cups water
1/4 cup of soy sauce
1 teaspoon pepper
2 quart saucepan (or slow cooker)

* If using a slow cooker, be sure to allow enough time for stew to simmer.

  1. Add meat, chickpeas, tomatoes, water, soy sauce and pepper to saucepan or slow cooker.
  2. Stove: Set stove to medium heat and let simmer for 30 minutes.
    Slow cooker: Set slow cooker to 4 hours.
  3. Let cool and serve.
  4. Enjoy!
